HUEVOS RANCHEROS
from Chef Jerry Cross of Guadalupe Inn
1 cup round steak diced small Vegetable oil for sautéing
3 cups fresh green chile diced
4 cups water
4 cloves garlic minced
Salt to taste
12 large eggs
6 soft corn tortillas heated
1onion and minced
1 cup cheddar grated
Sauté steak in an oiled skillet until browned
Combine steak chile garlic and salt in a saucepan simmer 10 to 15 min.
Meanwhile heat a small skillet and add oil. Cook eggs 2 at a time, flipping once to create over easy eggs.
Warm tortillas on oiled griddle or in a skillet.
To serve Layer heated tortilla on a plate and sprinkle minced onion and cheddar cheese on top.
Place eggs atop cheese then spoon on some chile sauce and another sprinkling of cheese
