Shacked kebab

Products

  • pork -750 g.
  • oil -100 g.
  • onion -4ct
  • peppers -5ct./hot peppers
  • black pepper
  • parsley
  • Salt

Preparation

    The meat, cut into small pieces, put in a saucepan and stew in butter to half-done. Then add finely chopped onions, hot peppers, black pepper, salt.
    Everything is simmering, until the onion is done, as from time to time the pot is shakes instead steer when you close the lid.
    The finished kebabs are served, sprinkled with chopped parsley over rice or mashed potatoes.

HUEVOS RANCHEROS

 
from Chef Jerry Cross of Guadalupe Inn

1 cup round steak diced small Vegetable oil for sautéing
3 cups fresh green chile diced
4 cups water
4 cloves garlic minced
Salt to taste
12 large eggs
6 soft corn tortillas heated
1onion and minced
1 cup cheddar grated

Sauté steak in an oiled skillet until browned
Combine steak chile garlic and salt in a saucepan simmer 10 to 15 min.
Meanwhile heat a small skillet and add oil. Cook eggs 2 at a time, flipping once to create over easy eggs.
Warm tortillas on oiled griddle or in a skillet.
To serve Layer heated tortilla on a plate and sprinkle minced onion and cheddar cheese on top.
Place eggs atop cheese then spoon on some chile sauce and another sprinkling of cheese

TURKEY GREEN CHILE HASH WITH CRANBERRY SALSA

Cranberry Salsa
2 cups dried cranberry chopped
1 cup fresh kumquats, thinly sliced 
1/2  cup balsamic vinegar
3 scallions finely chopped 
1/3  cup white onions finely chopped 
1/2 cup fresh cilantro chopped

White Sauce
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon thyme
1/4 teaspoon paprika
Pinch cayenne
Salt and pepper to taste

Turkey Hash
2 ounces chorizo sausage
5 tablespoons butter
1 large chopped in 1/2 inch dice 
1/2 jalapenos seeded and finely chopped
3 pounds turkey breast cooked and chopped
1 1/2 tablespoons cilantro finely chopped
1 tablespoon chives chopped 
1/2 cup fresh coarse bread crumbs
2 teaspoons grated lemon rind
2/3 cup chopped mild green chilies
Combine salsa ingredients in a medium bowl stir well to mix..
Cover and refrigerate at least 1 hour.
Combine white sauce ingredients in a small bowl; set aside.
Meanwhile fry chorizo in a large saucepan.
Drain well and remove from pan.
Melt 3 table spoons butter in the same pan sauté onion and jalapeno until transparent.
Add turkey cilantro, chives bread crumbs lemon rind green chilies and reserved white sauce.
Stir well  to blend well and season to taste.
Melt remaining butter in a large skillet when sizzling. add hash. Flattening with a spatula. Cook over heat about 25min or until under side is crisp and brown 
Serve topped with cranberry salsa.  Serves 6.
The trick to the next recipe is using fresh green Buy them fresh chilies.
Buy when they are in season then freeze enough to last until the next crop.
Serve with bacon, hash browns and a flour tortilla for a hearty breakfast.
Although guests complain that they gain 10 pounds with each visit they gladly order this again and again

Oatmeal Pancakes With Brandied Cider Sauce

Pancakes
1 cup milk 
1/2 cup quick-cooking oats
2 tbs butter melted
l egg 
1/2 cup plus 2 tablespoons all purpose flour
2 teaspoons baking powder
2 tablespoons sugar 
1/2 teaspoon salt

Cider Sauce
1 cup apple cider 
1/2 cup sugar
1 teaspoon lemon Juice
1 cinnamon stick
2 cloves
4 teaspoons cornstarch
2 teaspoons brandy

Preparation
Preheat well seasoned griddle or large skillet.
To make pancakes, heat milk to scalding and pour over oats in a medium mixing bowl stir and let stand 10 min.
Blend in butter and egg.
Sift flower, baking powder sugar and salt into a small  bowl.
Stir into oatmeal mixture.
Drop by 1/4 cupful onto griddle.
Bake until golden brown on both sides, turning once.
Meanwhile make the bran died cider sauce.
Bring 3/4 cup cider, lemon juice, cinnamon and cloves to a boil in small sauce pan.
Lower the heat and simmer 10 min.
Mix remaining 1/4 cup cider with the cornstarch and stir into a sauce; bring to boil and cook, stirring 1 minute Remove from heat and stir in brandy.

1/4 чаша - портокалов сок
2 ч.л. - соев сос
2 ч.л. - мед,
1 ч.л. - млян чесън
1 ч.л. - млян джинджифил
1 ч.л. нишесте
1 ч.л. олио

Начин на приготвяне:
В голяма купа се смесват портокалов сок, соев сос, мед, чесън, джинджифил, нишесте..
Зеленчуците се пържат в голям тиган на висока температураза около 6-8 мин, като внимателно се разбъркват от време на време.
Добавя се портокаловата смес и се оставя да къкри като се бърка от време на време докато сосът се сгъсти.

Вариянт
Може да се поръси и с запечни бадеми на жулиен.

Orange glazed vegetables

Ingredients
4 servings
1 lb – diner vegetables (broccoli, cauliflower, yellow squash, carrots, green beans, zucchini  and re peppers.)
1/4 cup – orange juice
2 tsp - soy souse
2 tsp – honey
1 tsp – minced garlic
1 tsp – minced ginger
1 tsp – cornstarch
1 tsp – vegetable oil

Preparation:
In large bowl combine orange juice, soy sauce, honey, garlic, ginger, cornstarch.
In large skillet heat the oil on HIGH, add vegetables and cook covered for 6-8 min, gently stirring occasionally.
Add orange souse and bring to simmer. Continue to cook wile stirring until sauce thickens.
Season and serve.

Белтъците се разбиват в сух стъклен съд. Миксера се пуска на бавни обороти и биенето забършва наРазбива се до момента, когато като дръппеш миксера от сместа, се образуват дълги връхчета, и само крайчета им се навеждат надолу. Втози момент белтъците са увеличили обема си 4 пъти.
Добавя се захата ПОСТЕПЕНО по 1 лъжичка  и се бърка до твърд сняг – когато дръпнеш миксера връхчетата са дълги и не се навеждат.
Сместта е готова, когато загребем смес с лъжица и обърнем надолъ, сместта не пада или когато разбъркаме сместта следите от лъжицата остават в сместта, а не се стичат

Пече се на 275F/140С 25-35мин
Пече се на 250-325F. Шприцовани целувки се пекат на 250F за 1час.
Ако забележиш, че целувките се зачервявата – намали температурата с 25F – за да не останат меки в средата и изгорели по поовърхността.
За да се предотврати напукване – фурната не се отваря през първата половина на печенето.
