Pancakes

I like the one in my old trustworthy Betty Crocker cookbook for buttermilk pancakes.
1 egg
1 cup flour
1 cup buttermilk
1 tbsp sugar
2 tbsp vegetable oil
1 tsp baking powder
1/2 tsp baking soda
beat the egg first, then add rest of ingredients and beat til smooth. Cook on a hot griddle, I spray mine with butter flavor cooking spray.

Buttermilk Pancakes...
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup white (or brown) sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
(Add 2 tablespoons of sour cream if you have any in the fridge... it makes them fluffier.)

1 1/2 cups flour
1 tsp salt
3 tsp baking powder
3 tbsp sugar
3 tbsp oil
1 egg
1 1/2 cup milk
stir all dry ingredients and with whisk 40 rotations.
add wet and mix until just blended. small lumps ok. heat a fry pan spray with the cooking spray with a ladle spoon out your size pancake. when you see bubble and a slight dullness to edges flip cook and serve good luck.

taste like McDonalds pancakes
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.

Buttermilk Pancakes
Your Ingredients:
1-cup all purpose flour
1/2-tsp baking soda
1/2-tsp salt
1 egg, separated
1-cup buttermilk
3-tbsp butter, melted
1/2-tsp pure vanilla extract
pinch of salt
2-tbsp vegetable oil
PREHEAT oven to 200ºF.
IF your electric mixer has two bowls, place the smaller bowl into the freezer.
WHISK together the flour, baking soda, and salt in a small bowl and set aside.
ADD the egg yolk and buttermilk to the large bowl of an electric mixer and beat until well blended.
ADD the flour mixture, melted butter and vanilla to the egg yolk mixture and beat on medium speed until just blended and smooth. DO NOT overmix.
WASH and dry the beaters or use a handheld mixer for this next step.
REMOVE the chilled bowl from the freezer and add the egg white with a pinch of salt. Beat until soft peaks form and fold the egg whites (with a rubber spatula) into the pancake batter.
HEAT a large skillet (or if you have a griddle, use it) on medium heat and oil it with the vegetable oil.
USE a ladle or a small cookie scoop to place the batter in the skillet or on the griddle depending on the size pancake that you’re making. That way, they’ll be uniform in size.
NOTE: At this point, you could sprinkle a few blueberries that have been rinsed and dried to the top of the pancakes.
COOK the pancakes until you see little bubbles forming all over the top of the pancakes. You can peek at the underside by using a spatula to lift up the edge. If the pancakes look golden, it’s time to turn.
CONTINUE cooking the other side until it’s also golden brown.
STACK the pancakes on an ovenproof plate and place in the preheated oven to keep warm while you make the remaining pancakes.
SERVE with room temperature butter, a dollop of whipped cream, and dust with powdered sugar for garnish. Have maple syrup on the side.

German Pancakes
Ingredients
1 C. Milk
6 eggs
1 C. flour
1 stick margarine
Directions
Preheat oven to 400 degrees. In blender, mix milk and eggs, and add flour a little at a time. Melt margarine in 9x13 in. baking pan, and then pour in flour mixture. Bake 20 to 25 minutes, until puffy and lightly browned. Remove from oven, cut into 8 pieces. Serve with powdered sugar, applesauce, or maple syrup. The pancakes do sink when removed from the oven.

Simple pancake recipes below:
1 1/2 cups flour
1 tablespoon sugar
4 teaspoons baking powder
1/4-1/2 teaspoon salt (or more depending on your taste, the original recipe said 1teasp.)
1 egg
4 tablespoons butter (melted) or shortening
1 1/4 cups milk
Sift dry ingredients together twice into a large bowl.
Beat the egg with the milk and add the melted butter, beating to combine.
Using a wooden spoon fold the egg mixture into the dry ingredients to make a smooth batter without over mixing.
Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
When bubbles appear on surface and begin to break, turn over and cook the other side.
Serve with either lemon juice & sugar sprinkled on them or with golden syrup or maple syrup.

Swedish pancake
18 min 3 min prep
2 eggs
1 1/4 cups flour
2-2 1/2 cups milk
1 teaspoon salt
butter (for frying)
Mix eggs, flour and salt.
Add the milk, a little at the time, and beat to a smooth and rather thin batter.
Heat the skillet, add a little butter and fry the pancakes on both sides.
Roll or stack them on a serving plate.
Serve hot, preferably with whipped cream and jam.

For fluffy pancakes:
15 min 5 min prep
1 cup flour
2 tablespoons sugar
2 tablespoons baking powder
1 egg
1 cup milk
2 tablespoons oil
In a medium bowl, combine the flour, sugar and powder.
In a small bowl, whisk together the egg, milk and oil, then add to the dry ingredients an beat until smooth.
Heat a greased pan and pour in about 1/2 cup of mix.
Allow pancakes to cook on one side until bubbles start to appear on the top and the bottom is golden, flip and let the other side cook until golden
These are just a few very simple, no fruit fillings added, no nuts, dried fruits, no baking needed you can do all the above on the stove and the prep and cooking times are listed.
